Kölsch bottled

I bottled the Kölsch today and came up with fitty one bottles o’ beer. This by far is the lightest beer I have brewed.

Kölsch photo

I set a lamp behind the Kölsch. It's clearing nicely at 61 degrees. I'm looking to bottle March 2nd.

Kölsch racked

The Kölsch is now racked into the secondary. It has been in the primary for 12 days, which is about twice as long as I usually leave a beer before racking. Let's hope all this time pays off in taste.

I bottled the Knucklehead Porter today and came up with 49 bottles of very dark beer!

By the way the Kölsch is going crazy in the fermenter! I guess the worry over frozen yeast was for nothing.

Kölsch

I just got done brewing a Kölsch. Kölsch is described in the Northern Brewer catalog this way:
This pale, light-bodied golden ale is copyrighted by, brewed in, and named for the German city of Köln. Kölschbier is traditionally given a long, cold aging period like a lager, which makes for a very smooth and clean beer. A small dose of German Hallertau hops gives a little authentic dryness without making the beer bitter—very refreshing.

The liquid yeast pitched into this batch arrived by UPS slushy and nearly frozen, so it will be interesting to see how this one works out.
