The Irish Draught has been bottled and fifty, yes fifty bottles of draught have been brought into this world! I must have done a good job siphoning right down to the bottom of the carboy because that is my all time record. The instructions that came with the kit say this should be ready to pop after 5 weeks. One week in the primary, two weeks in the secondary and two weeks conditioning in the bottles. By my calculations two weeks from now the draught will flow. Our pre bottling taste test revealed a low hopped, smooth brew with a hint of coffee flavor. The color is just a shade lighter than a Michelob Amber Bock with just a smidge of red. Hmmm what to brew next.
